2011 Domaine William Fèvre Chablis Grand Cru

Domaine William Fèvre, one of Chablis’ greatest wine domaines is located in the small town of Chablis, in the northernmost wine-growing region in Burgundy. The estate was founded in 1959 by William Fèvre and run by him until his retirement in 1998, when the Domaine was purchased by the Champagne House Joseph Henriot. Initially comprising just seven hectares, the estate now has 48 hectares of vineyards (including 12 hectares of premier cru vineyards and 16 hectares of grand cru vineyards) situated on soils comprised of famous Kimmeridgian clays. It is this unique Kimmeridgian soil, with alternating marl and marly limestone, that endows the wines with their distinctive and wonderful mineral character.

The Henriot team immediately made several changes, including reducing the amount of new oak used in production- the aim being to allow the wines to express the authenticity of this exceptional terroir. Today the wines are made by renowned winemaker Didier Séguier (previously from the Bouchard team in Beaune ). All of the grapes harvested by the estate are hand-picked and carefully hand sorted - a rarity in Chablis these days. The premier cru wines are vinified in 40-50% oak, the grands crus receiving 70-80% - but without using new wood, today the average age of wood in the cellars is 5 years old. The barrel and vat components are blended together after four to six months, for bottling before the end of the year.

These beautiful wines are intense, clean and precise. The Valmur possesses a wonderful fruitiness and roundness, resplendent with a superb mineral character and beautiful elegance. Perfect drinking for the languid days of summer...

There is positively gorgeous intensity and laser-like precision to the rich but wonderfully vibrant flavors that display moderate austerity on the focused and remarkably persistent finish.
