Tasting Notes
Interestingly this wine combines the winemaking practices of a Fino with the use of flor (Saccharomyces a blanket of yeast keeping retaining fruit characters) and the slow oxidation of an Oloroso. Slightly sweet but dry this Amontillado is aged in 500L American oak barrels for 6 years. With the classic aroma of toasted nuts there is a wonderful caramel nose and melted brown sugar. It is more full bodied than the Fino. The taste is of dried fig with lightly salted nuts and maple syrup that lingers on the finish. Genesis Wines, September 2010
